Description

Indulge in the ultimate comfort food with this Veggie Grilled Cheese Sandwich, a delightful twist on the classic favorite. This sandwich features melty Dill Havarti and Gouda cheeses layered over a hearty mix of oven-roasted seasonal vegetables, all nestled between two slices of crusty bread.

Ingredients

Scale
  • 1 zucchini (sliced)
  • 1 yellow squash (sliced)
  • 1 eggplant (sliced)
  • 1 red pepper (sliced)
  • ¼ cup red onions (sliced)
  • Olive oil spray
  • ½ teaspoon dill
  • Salt and pepper (to taste)
  • 2 tablespoons butter
  • 4 slices thick bread
  • 4 ounces Dill Havarti cheese (divided)
  • 4 ounces Gouda cheese (divided)

Instructions

  1. Preheat the oven to 400°F.
  2. Toss sliced vegetables with olive oil spray, dill, salt, and pepper, then spread them out on a baking sheet.
  3. Roast vegetables for about 10 minutes until slightly tender.
  4. Brush melted butter on one side of each slice of bread.
  5. In a skillet over medium-low heat, assemble the sandwich: place one slice of buttered bread down, add half the Dill Havarti cheese, half the roasted vegetables, half the Gouda cheese, then top with another buttered slice.
  6. Cook until golden brown and cheese is melted—about 4-6 minutes per side.
