  • 1/2 cup dairy-free yogurt (or unsweetened applesauce)
  • 1/3 cup dairy-free milk
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Chop the strawberries and mix with sugar, lemon juice, and flour; set aside.
  2. Preheat your oven to 350°F (175°C) and prepare a baking pan by greasing it or lining it with parchment paper.
  3. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  4. In another bowl, mix together dairy-free yogurt, dairy-free milk, oil, vinegar (if using), and vanilla until smooth.
  5. Combine the wet and dry mixtures gently without overmixing.
  6. Pour half the batter into the prepared pan, layer half the strawberry mixture on top, add remaining batter followed by the rest of the strawberries.
